Yes, there are a lot of carrots involved but carrots are really on the cheap. This will make a nutritious and delicious stock for your soup and you can freeze the remaining for other soups or dishes. The immune system is crucial in protecting the body against illness and keeping it healthy, and miso soup contains nutrients that support the immune system from the tofu, miso and seaweed in the soup. It's the simplest of ingredients with such great flavor, sweet carrots with the irreplaceable flavor of miso and ginger.
